This Sheet Pan Sweet and Sour Chicken is tender pieces of chicken, juicy pineapple, and vegetables seasoned and baked, tossed in sweet and sour sauce. It is as delicious as it is convenient with the ingredients baked together on a sheet pan for easy cleanup! Serve it over a bed of fluffy rice for a complete meal. Ingredients & Substitutions

Chicken: I prefer chicken breasts in this sheet pan meal. However, you could use chicken thighs, just ensure the chicken is cooked to an internal temperature of 165°F before serving.

Pineapple: Look for a can of pineapple chunks, drained, to add to the mix. If preferred, you could use fresh pineapple, cut into bite-sized pieces.

Vegetables: For a colorful medley, I used an onion, red bell pepper, and green bell pepper. Feel free to add or use other vegetables like broccoli florets, carrots, or sugar snap peas. Adjust the cooking times accordingly, depending on the vegetables.

Sweet and Sour Sauce: For the most flavorful sauce, make homemade sweet and sour sauce. The store-bought sauce will work, too.

Rice: For serving, cook up some white or brown rice.

Tips For Evenly Cooking Chicken In Sheet Pan Meals

For both safety and flavor, you want the chicken to be evenly cooked to an internal temperature of 165°F when making a sheet pan meal. To ensure even cooking:

  • Cut the chicken into uniform pieces (as close to the same size as possible).
  • Another way is to spread the ingredients in an even layer on the pan.
  • Flip or stir the ingredients on the sheet pan halfway through cooking.
  • To be extra sure, use a meat thermometer to check the internal temperature of the chicken.

How To Store Sweet and Sour Chicken

To store this sweet and sour meal, first, let the leftovers come to room temperature. Next, store it in an airtight container in the refrigerator. It will last up to 3 days or so. Reheat leftovers in the microwave or the oven at a low temperature.

Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound), cut into 1-inch pieces
  • 1 can (20 ounces) pineapple chunks, drained
  • 1 large yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons vegetable oil
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup sweet and sour sauce, homemade or store-bought
  • green onions, sliced for garnish
  • cooked white rice, for serving

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.

  • To a large bowl, add chicken, pineapple, onions, bell peppers, oil, garlic powder, salt, and pepper. Toss to combine.

  • Pour the mixture onto the baking sheet, spreading it into an even layer.

  • Bake for 20 minutes.

  • Carefully remove the pan from the oven and pour the sweet and sour sauce over the chicken and vegetables. Toss again to ensure everything is coated.

  • Return the pan to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through to an internal temperature of 165°F.

  • Serve immediately over cooked rice. Garnish with green onions.
