These butter cookies are a little like combining two classic favorites: sugar cookies and linzer cookies. And festive? Absolutely! As mentioned, they are delightful for Valentine’s Day and anniversaries, birthdays, or when you want to show someone how special they are.

And nothing beats cookies to show your love, right?!

Love Letter Inspiration

Throughout history, love letters have stood the test of time, from biblical references in Song of Solomon to historic figures penning missives to their loves, like an unknown recipient of Beethoven’s thoughts and letters penned by Napoleon to Josephine.

The Age of Chivalry is when we first begin recognizing the love letters we know today. In this era, correspondences became more personal, delivering chaste compliments and courtly love.

By the 18th century, historians find love letters becoming more specific and personal.

When was the last time you wrote a love letter?

“What cannot letters inspire? They have souls; they can speak; they have in them all that force which expresses the transports of the heart.”

What to Know About Love Letter Butter Cookies

While these cookies are very simple to make, here are some things to know!

  • The dough is soft: I wanted to make this dough softer than my favorite sugar cookie recipe because the shapes are folded into envelopes. You will need to chill the dough for 20-30 minutes.
  • Making shapes: The cookies are cut into squares. I’m using a 4-inch square cutter because I have them around for baking and teatime, but you can also cut squares using a sharp knife.
  • Choosing cookie size: As mentioned, I’m using a 4-inch square, but if you want the cookies smaller, it’s easy to adjust the size.
  • Heart-shaped seals: The heart-shaped letter seal is made using a mini heart-shaped cookie cutter.

Love Letter Butter Cookies Ingredients

These cookies are made from simple pantry ingredients. Specific measurements are in the recipe card below, but here is a quick look at what you need:

  • Unsalted butter: If you want to use salted butter, you can eliminate the salt in the recipe.
  • All-purpose flour: I have not yet tested this using alternative flour.
  • Granulated sugar: This is used in the recipe and for sprinkling the cookies before baking. If you want to use sparkling sugar for dusting, that works too!
  • Large egg for structure.
  • Salt to elevate the vanilla flavoring.
  • Vanilla extract
  • Jam filling: I’m using strawberry jam, but raspberry or lingonberry jam is also a beautiful red. Use your favorite, though.

How to Make Love Letter Butter Cookies

Step-by-step instructions are also in the recipe card at the bottom of this post.

Step 1: Make the dough

Cream the butter and sugar until pale and fluffy. Add the salt, vanilla, and egg; continue to beat until combined. Gradually add the flour until just combined with no flour streaks. The dough will be on the softer side.

Step 2: Chill the dough

Between 2 sheets of parchment paper, roll the dough to 1/4 – 1/8 inch thick. The dough mustn’t be too thick for the best-shaped cookies. Refrigerate for 30 minutes to chill the dough.

Step 3: Shape the cookies into love letters

Once chilled, remove from the refrigerator and remove the parchment paper. Use a sharp knife orsquare pastry cutterand cut the dough into 4-inch squares (or diamond shapes).

Transfer shapes to parchment-lined baking sheets. With the remaining dough, cut heart shapes using a mini heart-shaped cookie cutter.

Rotate the cookies into a diamond shape. Spoon 1-2 teaspoons of jam into the middle of each cookie square. Fold the two sides and bottom corners into the center to form an open envelope. Press the corners into the jam to seal, top with the mini heart shape, and sprinkle with sugar.

Step 4: Bake the cookies

Chill the shaped cookies in the refrigerator as you preheat the oven to 350℉. Then, bake, one sheet at a time, until the cookies are light and golden, about 15-17 minutes. Let cool completely before serving or storing.

FAQs

What does a cookie look like with too much butter? ›

Butter is an emulsifier and it makes cookies tender. It also adds in the crispy-around-the-edges element. Adding too much butter can cause the cookies to be flat and greasy.

What does butter give to a cookie? ›

The job of butter in baking (besides being delicious) is to give richness, tenderness and structure to cookies, cakes, pies and pastries. We alter the way butter works in a recipe by changing its temperature and choosing when to combine it with the other ingredients.

What happens if you don't use enough butter in cookies? ›

Dry Texture: Butter is a source of moisture in cookie dough. Without enough butter, the dough can become dry and crumbly. This can make it difficult to form the dough into cohesive balls or drop it onto baking sheets, and it can result in cookies that are overly dry and lacking in tenderness.

Why are my butter cookies not crispy? ›

Adjust baking time to achieve the cookie texture desired. A little less time produces chewier cookies, a little more time makes them crispy. If you prefer softer cookies, remove them from the oven while they are still slightly under baked. Always check for doneness at the minimum baking time.

What happens if you use melted butter instead of softened for cookies? ›

Cookies made with melted butter often deflate and become denser when they cool, resulting in a perfectly cooked fudgy center — a similar textural result to brownies that get rapped (aka banged against an oven rack mid-bake to deflate them) or Sarah Kieffer's iconic pan-banging cookies that turn out pleasantly compact.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

What happens if you put too much butter in cookies? ›

Too much butter makes cookies turn out just as you'd expect: very buttery. This batch of cookies was cakey in the middle, but also airy throughout, with crispy edges. They were yellow and slightly puffy in the middle, and brown and super thin around the perimeter.

What happens when too much butter is in cookies? ›

Too much butter makes cookies turn out just as you'd expect: very buttery. This batch of cookies was cakey in the middle, but also airy throughout, with crispy edges. They were yellow and slightly puffy in the middle, and brown and super thin around the perimeter.

What does adding more butter to a cookie do? ›

The higher the proportion of butter to other ingredients, the more tender your cookie will be (and consequently, the more it will spread as it bakes).

Can you overbeat butter in cookies? ›

It is possible to overmix the butter and sugar. If you overmix, the butter will separate out of the mixture and it will be grainy and soupy. Be sure to stop once your butter becomes light and fluffy.

What if I put too much butter in my dough? ›

Too much butter will result in a very soft, sticky dough that's difficult to shape, and bakes up greasy and dense.
