I think it is incredibly important to have a go-to recipe. & this one just might be yours! It can be hot or cold as well- which is super important. This means it can be a BBQ food or a dinner appetizer. I whip this sucker up in my newKitchenAid Stand Mixer & then put it in the fridge or in the oven to broil. Keep reading for all the details & why this new mixer is perfect for smaller jobs like this!

Purchasing my first KitchenAid mixer was huge for me. My grandmother always had one & since I love to cook- it seemed like an iconic kitchen staple. & it is. It has held up incredibly well & I’ve purchased even more attachments to use it fully. So what makes this different from my other beloved mixer? Why even consider swapping them out on my countertop?

TheArtisanMini Stand Mixer is20% smaller &25% lighter! Both of those things are HUGE for 5’3 me because my old faithful is pretty heavy. & my countertops are an OCD nightmare. So smaller & lighter? YAAAS please! The most interesting part? I’ve made HUGE batches of stuff in it fine!!! But I can make more reasonably sized recipes as well which is a huge plus.

Let’s talk dip now! It doesn’t even have to be a dip actually. Use it as a spread. Top mushroom caps. Eat it with a spoon. Turn it into a cheese ball. Use it on pizza. You’ll want to- it will rock your world! & the best part is how easy it is to throw together in a pinch. Honestly- I have all of these ingredients on hand pretty much all of the time so it has become effortless.

Ingredients

  • 8 oz cream cheese, softened
  • ½ cup cheddar cheese, grated
  • ¼ cup crumbled bacon, cooked crisp & drained
  • 2-4 jalapenos, chopped, seeded & roasted
  • ranch seasoning to taste
  • (see LOTS of substitution ideas within the post!)

Instructions

  1. If you're making this dip hot, preheat over to 500 degrees to broil.
  2. Add your bacon & jalapeno to a pan to crisp up & meld flavors. Remove from heat & place on a paper towel to absorb excess grease.
  3. Add your cream cheese & shredded cheese to the stand mixer. Mix on low. Push down sides with spatula.
  4. Add in ranch seasoning. Work up to high to really combine the cheeses & create a whipped texture.
  5. Add bacon & jalapenos. Mix with spatula to combine.
  6. Transfer to heat proof dish & place in oven to broil until desired crispness is reached. If using as a cold dip, place in fridge. After a few hours you can form into a ball as well.


Some substitution options? Maybe you aren’t s jalapeno fan. I mean- you’re crazy. But I get it. Sub in some roasted green chilies or even serranos for more heat. If you don’t have any peppers, sub in a bit of very thin, hot sauce so it won’t change the texture too much & perhaps some bell peppers. If you are looking for a vegetarian option- remove the bacon & sub in roasted corn (if you aren’t keto), artichoke hearts, black beans, or even a variety of roasted vegetables. I make my own ranch seasoning mix normally but feel free to sub in onion soup mix, mexican spices, & even cajun seasoning. Be creative because it is really hard to go in the wrong direction here!
